  1. Cortar la cebolla y chiltoma en juliana. Rallar el ajo finamente, poner a sofreír en el aceite, agregar la carne.
  2. Sofreír la carne por unos 7-8 minutos y agregar las salsas, agregar el tomate, sazonar con la sal, cocinar que hasta que suavice el tomate y reduzca la cantidad de líquido que haya soltado, agregar el arroz cocinado y remover hasta integrar todo, reservar para que enfríe
  3. Para la ensalada, rallar el repollo finamente, lavar y desinfectar muy bien. Cortar el tomate, el pepino, y la chiltoma en rodajas finas, mezclar con el repollo y agregar el vinagre y sal al gusto, reservar.
  4. Preparar la masa con el agua y una vez integradas agregar el aceite, esta masa no quedará ni muy seca ni muy líquida, de modo que se pueda moldear. Tomar un poco de la masa y en un molde plástico redondo (humedecerlo solo un poco con aceite), hacer una tortilla delgada, colocar dos cdas del relleno de la carne y con ayuda del mismo plástico cerrar y presionar los bordes
  5. Poner a calentar aceite suficiente y cuando esté bien caliente poner a freír con cuidado de que no se abra, darles vuelta solo hasta que se vea dorada de la parte de abajo, cocinar de ambos lados, sacar y poner en papel absorbente. Servir calientes con ensalada y chiles encurtidos.
