- Marinada: luego de cortar la carne en fajitas delgadas, con el cuchillo en ángulos de 30° con la tabla de picar, sazonamos, agregamos azúcar, ajos, salsa de soja y cilantro, masajeamos la carne, agregamos el limón, orégano y el aceite de ajíes, integramos, tapamos y dejamos marinar al menos 1 hora en la heladera.
- Luego de la hora, retiramos de la heladera y le damos 1 minutos de microondas, para temperarla, quitarle el frío. Verifica que la carne esté casi a temperatura ambiente, no debe estar fría al agregarla al wok.
- Calentamos el wok y cuando esté muy caliente, agregamos el aceite. Cuando el aceite de el primer humo agregamos la carne y salteamos 3 a 4 minutos, verificamos la sal y agregamos la cebolla y los pimentones, salteamos un minuto más y listo. Lo vital es tener una llama muy muy fuerte, la carne debe freírse y no sancocharse, yo ocupo un reverbero para wok. Si su llama es de estufas caseras, hágalo poco a poco y reserva la carne, luego los vegetales y al final une todo.
